● 1/2 cup coconut milk
● 1 cup fresh spinach, chopped
● Salt and black pepper to taste
● 1/4 cup chopped fresh cilantro, for garnish Cooked brown rice, for serving.




instructions:

1. Heat the coconut oil in a large saucepan over medium heat. Add the onion, garlic, ginger and red bell pepper. Cook for about 5–7 minutes, or until the vegetables are soft and fragrant.

2. Add the spices — the curry powder, cumin, turmeric and sweet paprika — and cook for another 2–3 minutes, or until fragrant.

3. Add the chickpeas and chopped tomatoes to the pan and mix well. Add salt and pepper to taste. Let the mixture simmer over medium-low heat for about 10–15 minutes, or until the chickpeas are hot and soft.

4. Add the coconut milk and chopped spinach to the pan and mix well. Let the mixture simmer over medium-low heat for about 5 more minutes, or until the spinach is cooked and the sauce has thickened slightly.

5. Serve the chickpea curry hot with cooked brown rice and garnished with chopped fresh cilantro.
